Shinjuku Tonkotsu Ramen

Ingredients

2 serves

  • 1 kg pork bones

  • 6 cups water

  • 2 garlic cloves

  • 1 inch ginger

  • 1 tbsp soy sauce

  • Ramen noodles

  • Toppings: chashu, egg, bamboo shoots, spring onion

Method

  1. Boil bones to create a rich broth.

  2. Simmer with garlic, ginger, soy sauce.

  3. Cook noodles separately.

  4. Assemble bowls with broth and toppings.

Ichiran

In 1960, Ichiran was born in Fukuoka City, Fukuoka (Southern Japan). This area is ALL ABOUT tonkotsu (pork bone) ramen, a style now loved around the world.
