Tokyo Disneyland Caramel Popcorn

Ingredients

2 serves

(Makes one big bowl)

  • 1/2 cup popcorn kernels

  • 2 tbsp vegetable oil

  • 1/2 cup brown sugar

  • 1/4 cup unsalted butter

  • 2 tbsp corn syrup or honey

  • 1/4 tsp salt

  • 1/4 tsp baking soda

  • 1/2 tsp vanilla extract

Method

  1. Pop the corn using oil in a pot or popcorn maker. Set aside in a big bowl.

  2. In a saucepan, melt butter, add brown sugar, syrup, and salt. Stir over medium heat.

  3. Once bubbling, let it cook for 4–5 mins without stirring.

  4. Remove from heat, add baking soda and vanilla. Stir quickly.

  5. Pour the caramel over the popcorn and toss to coat evenly.

  6. Spread onto baking tray and bake at 120°C for 30 mins, stirring every 10 mins. Let it cool.
